Punjene krofne s visnjama (Donuts stuffed with cherries)

Sastojci: 500g brasna, 2 jajeta, 250ml toplog mleka, 20g kvasca, 50g margarina (putera), na vrh noza soli, 2 kasicice secera, oko 50 komada konzervisanih visanja ili svezih, 250g mase za marcipan, margarin za podmazivanje pleha/tepsije i za posipanje: 5 kasika secera u prahu.

Priprema:

1) U solju sipati 150ml mleka, izmrviti kvasac, dodati 1 kasiku brasna i secer. Promesati i ostaviti da kvasac nadodje.

2) U vanglu, sipati brasno, dodati so, nadosli kvasac i preostalo mleko i zamesiti testo. Ostaviti da nadodje.

3) Formirati rolnu i podeliti na 50 jednakih kolutova. Svaki kolut pritisnuti dlanom, da dobijete velicinu od oko 8cm. Masu za marcipan takodje podelite na 50 delova. Svaki kolut pritisnite dlanom, da dobijete velicinu od oko 4cm, i stavite na sredinu testa.

4) Na marcipan stavite po jednu visnju (dobro ocedjenu – ako je iz konzerve ili tegle i bez kostica). Kolutove testa sa filom formirajte u lopte. Okruglu dublju tepsiju premazite margarinom i poredjate krofnice (postavite jednu do druge), ispunite tepsiju, ali ne previse gusto.

5) Ostaviti na toplom da ponovo nadodju oko 20 minuta, a zatim stavite u rernu, prethodno zagrejanu na 220° i pecite oko 20-25 minuta.

6) Pospite secerom u prahu pre sluzenja.

Ingredients: 500g flour, 2 eggs, 250ml warm milk, 20g yeast, 50g margarine (butter), on top of the knife of salt, 2 teaspoons sugar, about 50 pieces canned or fresh cherries, 250g marzipan mass, margarine for greasing the baking pan/dish and for sprinkling – 5 tablespoons powdered sugar.

Preparation:
1) Pour 150ml milk in cup, crumble yeast, add 1 tablespoon of flour and sugar. Stir and let the yeast rest.
2) In bowl, pour the flour, add the salt, yeast and remaining milk and knead the dough. Leave it to rise.
3) Form roll and divide into 50 equal balls. Press each ball with palms to get the size of about 8cm. Divide marzipan mass into 50 balls. Press each ball with palms to get the size of about 4cm, and put in the middle of the dough.
4) Place one sour cherry on the marzipan (well drained – if it’s from cans or jars and removed pits). Rings of dough with toppings, form into balls. Deeper round baking pan/dish, grease with margarine and put donuts (set next to each other), fill the pan, but not too thick.
5) Leave it in a warm place for about 20 minutes to rise again, then put in the oven, pre-heated to 220 degrees and bake for about 20-25 minutes.
6) Sprinkle with powdered sugar before serving.

Podloga za picu (Pizza dough)

Sastojci: 400g brasna, 1/2 kasicice soli, 1 kasika maslinovog ulja, 100ml tople vode, 100ml mleka (punomasnog), 10g suvog kvasca, margarin (za podmazivanje pleha/tepsije).

Priprema: 

1) U solju sipati mleko, izmrviti kvasac, dodati kasiku brasna, promesati i ostaviti da nadodje.

2) Brasno sipati u posudu, dodati so, promesati; u sredini napraviti rupu dodati nadosao kvasac, vodu i umesiti testo. Ostaviti da nadodje.

3) Zatim ponovo premesiti, podeliti na dve ili vise jufki, razviti tanke krugove, krajeve ostaviti malo deblje. Staviti u pleh/tepsiju podmazan margarinom.

Napomena: testo izbodite vise puta viljuskom da prilikom pecenja ne nastanu mehuri.

4) Prve pice (zavisno od velicine pica) ostaviti da nadodju 15-20 minuta pre nego sto ih stavite da se peku. Peci u zagrejanoj rerni na 220°, od 25 do 45 minuta, sto zavisi od debljine sloja koji ste poslagali na testo.

Ingredients: 400g flour, 1/2 teaspoon salt, 1 tablespoon of olive oil, 100ml warm water, 100ml milk (full-fat), 10g of dry yeast, margarine (for greasing pan/dish).

Preparation:
1) Pour milk into a cup, crumble the yeast, add a tablespoon of flour, stir and leave to rest.
2) Pour flour into a bowl, add salt, stir, make a hole in the middle to add risen yeast and water, and then knead the dough. Leave it to rest.
3) Then, knead the dough again, divide into two or more balls, develop a thin circle, leave ends a little thicker. Put in baking dish/pan greased with margarine.
Note: Press the dough with fork several times, so during baking there are no bubbles.
4) The first pizza (depending on size of pizza) leave it to rest for 15-20 minutes before you put them to bake. Bake in preheated oven at 220 °, for 25 to 45 minutes, depending on the thickness of the layer that you placed on the dough.

Hleb od celih zrna sa orasima (Whole grain bread with walnuts)

Sastojci: 250g psenicnog brasna, 150g psenice (krupno samlevene), 20g kvasca, 1 kasika meda, 370ml toplog mleka, 250g oraha, 80g margarina (putera), 1 kasicica soli, 1 kasicica semena anisa, 1 zumance, 2 kasike kisele pavlake, 2 kasike susama.

Priprema:

1) U solju sipati 150 ml mleka, izmrviti kvasac i dodati med. Promesati i ostaviti na uskisne.

2) Orahe krupno iseckati.

3) Pomesati brasno, so, anis i psenicu u vangli, napraviti rupu u sredini, dodati uskisli kvasac, dodati margarin iseckan na listice i ostatak mleka. Zamesiti testo, kad pocne da se odvaja od posude pokriti i ostaviti da udvostruci masu.

4) Zatim dodati orahe.

Napomena: kao i kod testa sa kvascem orasi se dodaju na kraju inace bi testo posivelo.

5)  Formirati hleb, staviti u podmazan pleh i ostaviti da naraste 30 minuta. Rernu zagrejati na 220°. Zaseci hleb odozgo na nekoliko mesta.

6) Umutiti zumance i kiselu pavlaku i premazati hleb. Posuti susamom i peci 10 minuta, zatim smanjiti temperaturu na 200° i peci jos 1 sat.

Ingredients: 250g wheat flour, 150g wheat grains (coarse grinded), 20g of yeast, 1 tablespoon honey, 370ml warm milk, 250g walnuts, 80g margarine (butter), 1 teaspoon salt, 1 teaspoon anise seeds, 1 egg yolk, 2 tablespoons of sour cream, 2 tablespoons sesame seeds.

Preparation:
1) Pour 150 ml of milk in cup, crumble the yeast and add honey. Stir and leave to rise.
2) Chop the walnuts.
3) Combine flour, salt, anise seeds and wheat grains in bowl, make a hole in the middle, add risen yeast, add margarine (cut into strips) and the rest of milk. Knead the dough, when it starts to pull away from the bowl cover and leave to rise until double the mass.
4) Then add the walnuts.

Note: as with Dough with yeast, walnuts are added at the end otherwise the dough would become gray.
5) Develop bread, put in greased pan and allow to rise for 30 minutes. Preheat oven to 220 °. Cut bread on top with knife few times.
6) Whisk egg yolk and sour cream and brush bread. Sprinkle with sesame seeds and bake for 10 minutes, then reduce temperature to 200 degrees and bake for another hour.

Proja sa cvarcima (Corn bread with pork crisps)

Sastojci: 500g kukuruznog brasna, 250g cvaraka, 1 kasika masti, 10g sode bikarbone, malo tople vode.

Priprema:

1) Pomesati kukuruzno brasno i sodu bikarbonu.

2) Dodati cvarke i mast i zamesiti sa malo tople vode. Mesiti dok se ne dobije srednje retko testo.

3) Pleh namazati mascu, uliti smesu i peci na 220° oko 20-30 minuta.

Ingredients: 500g corn flour, 250g pork crisps, 1 tablespoon of lard, 10g of baking soda, a little warm water.

Preparation:
1) Mix corn flour and baking soda.
2) Add pork crisps and lard and knead with warm water. Knead the dough until you get medium-rare dough.
3) Grease the pan with lard, pour the mixture and bake at 220 ° about 20-30 minutes.

Priprema zeleni za corbu (Homemade seasoning for stews, soups)

Sastojci: 2 kg sargarepe, 1 kg persunovog korena, 1 kg kelerabe, 2-3 glavice crnog luka, 5 cena belog luka, 3-4 struka praziluka, 1 kg korena celera, 1 kg kelja,  1 kg karfiola, 2 vezice lista celera, 2 vezice lista persuna,  i po 150g suvih pecuraka na svaki kilogram mlevene mase, 1.2 kg soli.

Priprema:
1) Navedeno povrce operite, ocistite od kore pa sameljite na masini za meso.
2) U pleh staviti papir za pecenje, sipati samleveno povrce, jedan red i staviti u rernu da se susi na najmanju temperaturu.
3) Sve dobro posolite i drvenom cistom varjacom promesajte.
4) Dobro napunite tegle, sabijajuci red po red.
5) Povezati duplim celofanom i ostaviti u ostavi do upotrebe.

Napomena: vodite racuna da prilikom upotrebe ne solite jelo, jer je vec zelen slan. Ako necete da susite u rerni mozete dodati 10g konzervansa. Konzervans dodajete posle soli (korak 3).

Ingredients: 2 kg carrot, 1 kg parsley root, 1kg kohlrabi, 2-3 onions, 5 cloves of garlic, 3-4 waist leek, 1 kg celery root, 1 kg of kale, 1 kg cauliflower, 2 bunch of celery leaf, 2 bunch of parsley leaf and 150 g dry mushrooms on every kg of ground mass, 1.2 kg of salt.

Preparation:
1) All vegetables wash, clean from rind and grind in the meat machine.
2) In the baking pan put the baking paper, put the minced vegetables, one layer and place in the oven to dry at very low the temperature.
3) Season good all with salt and with clean wooden spoon stir well.
4) Fill jars and press well layer by layer.
5) Connect with double cellophane and leave in the pantry until use.

Note: keep in mind that when using this, do no add salt when cooking, because it is already salty. If you don’t want to dry in the oven, you can add 10g of preservative. Add preservative after adding salt (step 3).

Sok od kupina (Blackberry juice)

Sastojci: kupine, na 1 l dobijenog soka 1 kg secera (kristal), sok od 1 limuna.

Priprema:

1) Krupne i zrele kupine oprati, izgnjeciti i procediti na sito.
2) Na 1 l dobijenog soka staviti secer i sok od limuna.
3) Kuvati na jakoj vatri 30 minuta, stalno mesajuci.
4) Vruce sipati u ciste flase, ohladiti pa tek onda flase zatvoriti.

Ingredients: blackberries, on 1 liter of juice 1 kg of sugar, juice of 1 lemon.

Preparation:

1) Big and ripe blackberries wash, squeeze and strain in the sieve.
2) On 1 liter of juice put sugar and lemon juice.
3) Cook over high heat for 30 minutes, constantly stirring.
4) Hot pour into a clean bottles, let it cool down and then close the bottles.

Voce konzervisano u rumu 4 (Fruit preserved in rum 4)

Sastojci: 500g voca, 350g secera, 350ml ruma.

Napomena: ukoliko svo voce ostavljate odjednom, onda vam je dovoljna ova kolicina ruma. Ukoliko pocinjete prvo sa jednom vrstom pa za njom dodajete drugu vrstu voca, tada se kolicina ruma povecava na dvostruko.

Priprema:

1) Na svo odabrano i pripremljeno voce stavite secer, sve drvenom varjacom izmesati, napuniti ciste tegle pa naliti rumom.
2) Povezati dobro duplim celofanom i ostaviti do upotrebe (6 do 8 nedelja, a moze i duze).

Savet: voce stavljeno na ovaj nacin mozete servirati sa piskotama uz caj, kao vocnu salatu ili kao dodatak raznim kremovima, prelivima i sladoledu. Takodje je izvanredan fil testima koja se ukrasavaju slagom.

Ingredients: 500g of fruit, 350g sugar, 350ml of rum.

Note: if you are leaving all the fruit at once, then this quantity of rum is enough. If you start first with one type of fruit, then you add other type of fruit, then the quantity of rum increases to double.

Preparation:

1) For all selected and prepared fruit put the sugar, mix all with the wooden spoon, fill clean jars, then pour rum.
2) Cover good with double cellophane and tie with elastic rubber bands and leave until used (6 to 8 weeks, but may take longer).

Tip: fruit prepared in this way can be served with biscuits with tea, like fruit salad or as an addition to various creams, sauces and ice creams. It is also remarkable for cakes which are decorated with whipped cream.

Voce konzervisano u rumu 3 (Fruit preserved in rum 3)

Mozete svo voce ostaviti odjednom, odnosno svo mesano voce koje se pojavljuje  u jednom mesecu.

Sastojci: 3 kg voca, 3 kg secera (kristal), rum po potrebi (zavisno od velicine tegle).

Priprema:

1) Na svo odabrano i pripremljeno voce stavite secer, sve drvenom varjacom izmesati, napuniti ciste tegle pa naliti rumom.

Napomena: rum treba naliti u visina 3 prsta iznad nivoa voca.

2) Povezati dobro duplim celofanom i ostaviti do upotrebe (6 do 8 nedelja, a moze i duze).

You can leave all the fruit at once, or all mixed fruit which appears in one month.

Ingredients: 3 kg of fruit, 3 kg of sugar, rum, as necessary (depending on the size of the jar).

Preparation:

1) For all selected and prepared fruit put the sugar, mix all with the wooden spoon, fill clean jars and pour rum.

Note: you should fill the rum to the height of three fingers above the fruit.

2) Cover good with double cellophane and tie with elastic rubber bands and leave until used (6 to 8 weeks, but may take longer).

Priprema voca za sokove

1) Voce pazljivo odaberite da bude zrelo ali jedro, operite ga i stavite da se potpuno ocedi od vode.
2) Jagode i maline ocistite od lisca, sljivama povadite kostice, visnjama takodje.
3) Breskve i kajsije oljustite od ljuske pa i njima povadite kostice, sa dinje i lubenice skinite koru, oslobodite ih od kostica, isecite u komade zeljene velicine.
4) Kruske oljustite, povadite im jezgro, rasecite ih na 4 dela pa ih desetak minuta prokuvajte u zasladjenoj vodi. Vreme racunajte od momenta kljucanja sirupa.
5) Ukoliko ostavljate kompot od ananasa, ocistite ga od kore, izvadite drvenasto jezgro, pa ga isecite na duguljaste komade duzine 3 cm a sirine 1 cm.

Priprema vocnih sokova (Preparation of fruit juices)

Sastojci: voce po potrebi i zelji (jagode, maline, sljive, breskve, kajsije, kruske), na 1 l soka 500g secera (kristal).

Priprema:
1) Ocistiti i oprati voce, povaditi kostice i izgnjeciti ga. To je najbolje raditi u staklenom ili porcelanskom sudu ukoliko nemate masinu za cedjenje.
2) Sok ocediti pa dodati secer.
3) Tako pripremljen sok kuvati najakoj vatri.

Napomena: ukoliko se sok brze ukuva utoliko ima lepsu boju i prirodniji miris.

Ingredients: fruits as needed and desired (strawberries, raspberries, plums, peaches, apricots, pears), 1 liter juice 500g sugar (crystal).

Preparation:
1) Clean and wash the fruit, remove the pits and mash it. This is best done in a glass or porcelain container if you do not have a juicer.
2) Drain the juice and add the sugar.
3) Cook the juice on the high heat.

Note: if the juice is boiled quickly it has a nicer color and a more natural smell.
