Spagete sa sunkom i sosom od pavlake (Spaghetti wih ham and sour cream sauce)

Priprema:

1) Crni luk i beli luk oljustiti i sitno iseckati. Sunku sitno iseckati.
2) Obariti spagete u slanoj vodi. Ocediti.
3) U tiganju otopiti margarin, dodati crni luk i beli luk. Prziti oko 3 minuta. Zatim dodati sunku i prziti jos oko 3 minuta. Dodati supu i kuvati 10 minuta.
Napomena: ako koristite beli luk u granulama, dodati sa ostalim zacinima.
4) Dodati kiselu pavlaku, promesati, pa dodati origano i bosiljak. Opet promesati i kuvati jos oko 5 minuta.
5) Sipati spagete i preliti sosom.

Ingredients: 250g Spaghetti (not cooked), 400g sour cream, 200g ham, 500ml soup, 1 tablespoon butter, 1 onion, 1 clove garlic (or 1/2 teaspoon granulated), 1/2 teaspoon oregano, 1/2 teaspoon basil, 1/2 teaspoon nutmeg.

Preparation:

1) Peel onion and garlic and finely chop. Chop ham.
2) Cook spaghetti in salted water. Drain.
3) In a skillet melt butter, add onion and garlic. Fry for about 3 minutes. Then add the ham and fry for about 3 minutes. Add broth and simmer 10 minutes.
Note: If you are using granulated garlic, add it with other spices.
4) Add the sour cream, stir, and add the oregano and basil. Again, stir and cook for about 5 minutes.
5) Put spaghetti and pour with sauce.

Cokoladne oblande sa kokosom (Chocolate wafers with coconut)

Priprema:
1) U serpu staviti 300ml mleka sa 200g secera i ostaviti da prokljuca. Smanjiti na srednju temperaturu, dodati 250g margarina i mesati dok se ne otopi. Podeliti na 2 dela. U jedan deo dodati cokoladu i mesati dok se ne otopi. Skloniti sa sporeta, dodati 250g mlevenog keksa i promesati. Ostaviti da se ohladi, povremeno promesati.
2) U serpu staviti 300ml mleka sa 200g secera i ostaviti da prokljuca. Smanjiti na srednju temperaturu, dodati 250g margarina i mesati dok se ne otopi. Dodati kokos i promesati. Zatim dodati 350g mlevenog keksa. Zatim dodati drugi deo iz koraka 1) i promesati. Ostaviti da se ohladi, povremeno promesati. Podeliti na 3 dela.
3) Redjati sledecim redom: list oblande, zuti fil, list oblande, crni fil, list oblande, zuti fil, list oblande, crni fil, list oblande, zuti fil.
4) Prekriti masnim papirom, staviti posluzavnik, poredjati par teskih knjiga, ostaviti da odstoji pa seci zeljene oblike.

Ingredients: 600ml milk, 380g sugar, 500g margarine, 600g plain biscuits (ground), 100g coconut, 50g of chocolate, 5 wafer sheets (smaller).

Preparation:
1) In saucepan, put 300ml of milk with 200g of sugar and allow to boil. Reduce the temperature to medium, add 250g margarine and stir until is melted. Divide into 2 parts. In one part, add the chocolate and stir until is melted. Remove from stove, add 250g ground plain biscuit and stir. Allow to cool, stir occasionally.
2) In saucepan, put 300ml of milk with 200g of sugar and allow to boil. Reduce the temperature to medium, add 250g margarine and stir until is melted. Add coconut and stir. Then add 350g ground plain biscuit. Then add the second part from step 1) and stir. Allow to cool, stir occasionally. Divide into 3 parts.
3) arrange in following order: leaf wafer, yellow filling, wafer sheet, black filling, wafer sheet, yellow filling, wafer sheet, black filling, wafer sheet, yellow custard.
4) Cover the oily paper, put the plate, align a pair of heavy books, and let it sit for a while, then cut into desired shapes.

Pljeskavice bez jaja sa sargarepom (Patties without eggs with carrots)

Sastojci: 600g mlevenog mesa, 1 glavica crnog luka, 2 cena belog luka, 2 sargarepe,
1 kasika vegete, 1 kasicica origana ili 1 kasicica majcine dusice, 1 kasicica persuna (suvog), 2 kasike prezli (opciono) i biber, sos od luka – 200g crnog luka, 70g margarina (putera), 30g secera, 40g brasna, so, biber, 1 kasicica sirceta, 500ml supe.

Priprema:
1) Crni luk, beli luk i sargarepu oljustiti i sitno iseckati.
2) U ciniju staviti mleveno meso, dodati crni luk, beli luk, sargarepu, vegetu, origano (ili majcinu dusicu), persun, prezle i biber.
3) Umesiti rukama, formirati pljeskavice (ruke namazati uljem) i ostaviti u frizideru na 1 sat.
4) Peci na sporetu ili rostilju. Staviti na papir da upije visak ulja.
 sos-od-crnog-luka-onion-sauce5) Za sos od crnog luka – crni luk ocistiti i sitno iseckati. U tiganju, otopiti margarin, dodati secer i kratko prziti. Dodati crni luk i opet kratko proprziti. Dodati brasno, promesati i naliti supom. Posoliti i pobiberiti po ukusu, dodati sirce. Kuvati na srednjoj temperaturi oko 20 minuta, ili dok sva supa ne ispari.
6) Opciono ispasirati i preliti preko pljeskavica.

Savet: ako zelite oblik pravih pljeskavica, formirati manju pljeskavicu rukama (ruke namazati uljem), zatim je staviti na najlon kesu, preklopiti najlon kesom, pritisnuti daskom za seckanje, do otprilike 0,8-1 cm debljine.

Predlog: pljeskavice mozete posluziti uz krompir pire.

Ingredients: 600g minced meat, 1 onion, 2 cloves of garlic, 2 carrots,
1 tablespoon of vegetable seasoning, or 1 teaspoon oregano or 1 teaspoon thyme, 1 teaspoon parsley (dried), 2 tablespoons breadcrumbs (optional) and pepper, onion sauce – 200g onion, 70g margarine (butter), 30g sugar, 40g flour, salt, pepper, 1 teaspoon vinegar, 500ml soup.

Preparation:
1) Peel onions, garlic and carrots and finely chop.

3) Then knead with your hands, form patties (oil your hands) and leave in the refrigerator for 1 hour.
4) Bake on the stove or grill. Put on paper to absorb excess oil.
5) For the onion sauce – clean onions and finely chop. In skillet, melt butter, add sugar and fry briefly. Add onions and fry again shortly. Add flour, stir and pour the soup. Add salt and pepper to taste and add vinegar. Cook on medium heat for about 20 minutes, or until all soup evaporate.
6) Optional blend and pour over patties.

Tip: if you want to form real patties, form smaller patties with hands (oil your hands), then put on a nylon bag, cover with nylon bag, press with chopping board to about 0.8-1 cm thickness.

Suggestion: you can serve patties with mashed potatoes.

Spanac sa sosom od jogurta (Spinach with buttermilk sauce)

Sastojci: sos od jogurta, 500g spanaca (svez ili smrznut), 2 kasike margarina, 2 cena belog luka ili 1 glavica crnog luka (sitno iseckanog), 150ml vode, so, biber (mleveni)

Priprema:
1) Ako koristite svez spanac – spanac oprati i ocistiti. Staviti da se kuva u posoljenoj vodi. Ocediti i sitno iseckati.

Cooking-spinach2) Crni luk ili beli luk proprziti u tiganju, dodati margarin i spanac i jos malo prziti.
3) Ako koristite zamrznuti spanac. Odmrznuti. Ponoviti korak 2.
4) Spanac staviti u tanjir i preliti sosom od jogurta.

Ingredients: buttermilk sauce, 500g spinach (fresh or frozen), 2 tablespoons margarine, 2 cloves of garlic or 1 onion (finely chopped), 150 ml of water, salt, pepper (ground)

Preparation:
1) If you use fresh spinach – wash and clean spinach. Let it cook in salted water. Drain and finely chop.

Priprema:
1) Jogurt sipati u ciniju, dodati persun, sok i koru od limuna, vlasac, secer i so. Dobro izmesati.

Savet 1: ovaj sos mozete posluziti uz cufte, pljeskavice od povrca ili mesa, raznjice od povrca, peceno ili bareno meso, pohovanu ili przenu ribu, spanac, krokete od spanaca ili krompir pire.

Savet 2: ako koristitte sos sa pecenim ili barenim mesom ili pljeskavicama od mesa, mozete dodati 1 kasiku senfa.

Punc od pomorandze i sokom od jabuka (Orange and apple juice punch)

Sastojci: 1 L belog ruma, 500ml sok od jabuka, 250ml soka od limuna, procedjen (oko 6 limuna), 2 L soka od pomorandze, 750ml suvog belog vina, za ukrasavanje – nekoliko pomorandzi, sveza nana.

Priprema:
1) U ciniji za punc pomesati sok od jabuke, limuna i pomorandze i rum. Ostaviti u frizider da se ohladi.
2) Dodati belo vino i ukrasiti kolutovima limuna i listovima nane.

Ingredients: 1 L of white rum, 500ml apple juice, 250ml lemon juice, filtered (about 6 lemons), 2 L of orange juice, 750ml dry white wine, 1 orange, to decorate – a few oranges, fresh mint.

Preparation:
1) In the punch bowl combine apple juice, lemon juice and orange juice and rum. Leave in refrigerator to cool.

Cokoladni kolac sa kokosom (Chocolate cake with coconut)

Sastojci: 2 jaja, 8 kasika secera, 12 kasika mleka, 12 kasika brasna, 10g praska za pecivo, 1 kasika kakaoa, za fil – 500ml mleka, 8 kasika secera, 3 kasike griza, 250g margarina, 100g cokolade, 100g kokosa.

Priprema:
1) Pomesati brasno sa praskom za pecivo. Umutiti jaja sa secerom, dodati mleko i brasno. Dobro izmesati.
2) Pleh podmazati margarinom, posuti brasnom, sipati smesu i peci na 200 C dok cackalica stavljena u sredinu ne izadje cista. Ostaviti da se ohladi pa iseci na pola (ako koristite manji a dublji pleh, preseci po horizontali, a ako koristite veci a plici pleh, onda po vertikali)
3) Za fil – skuvati mleko, dodati secer i griz i kuvati oko 7 minuta, uz stalno mesanje. Zatim dodati kokos i kuvati jos 3 minuta. Ostaviti da se prohladi. Dodati margarin i cokoladu izlomljenu na kocke. Dobro izmesati.
4) Fil staviti preko prve kore, poklopiti drugom korom i seci na kocke.

Ingredients: 2 eggs, 8 tablespoons of sugar, 12 tablespoons of milk, 12 tablespoons of flour, 10g baking powder, 1 tablespoon cocoa, for filling – 500ml milk, 8 tablespoons of sugar, 3 tablespoons of semolina, 250g butter, 100g chocolate, 100g coconut.

Preparation:
1) Mix flour with baking powder. Whisk the eggs with the sugar, add the milk and flour. Mix well.
2) Grease the baking pan with margarine, sprinkle with flour, pour the mixture and bake at 200 C until a toothpick inserted in the center comes out clean. Allow to cool and cut it in half (if you are using a smaller and deeper pan, cut horizontally, and if you are using a larger and shallower pan, then cut vertically)
3) For the filling – Boil the milk, add the sugar and semolina and cook for about 7 minutes, with constant stirring. Then add coconut and cook for 3 more minutes. Allow to cool. Add margarine and chocolate broken into pieces. Mix well.
4) Put filling over first crust, cover with second and cut in cubes.

Perece sa sirom (Pretzels with cheese)

Sastojci: 600g brasna, 10g praska za pecivo, 2 jaja, 280g margarina, 1 kasika kima, 1 kasicica soli, 350g kackavalja (ili fete, ili sitnog sira).

Priprema:
1) Od jednog jajeta, odvojiti belance od zumanca.
2) Pomesati brasno, prasak za pecivo i so.  Dodati margarin, jaje i zumance. Umesiti testo.
3) Zatim dodati kackavalj i kim i ponovo umesiti. Razviti na debljinu 1 cm. Modlicom vaditi perece.
4) Pleh podmazati margarinom, poredjati perece. Umuititi belance, premazati perece i peci na 180 C oko 20 minuta.

Ingredients: 600g flour, 10g baking powder, 2 eggs, 280g butter, 1 tablespoon cumin, 1 teaspoon salt, 350g yellow cheese (or feta cheese or cottage cheese).

Preparation:
1) From an egg, separate the egg white from the egg yolk.
2) Combine flour, baking powder and salt. Add margarine, egg and egg yolk. Then knead the dough.
3) Then add the cheese and cumin and then knead again. Develop the dough thickness of 1 cm. Cut pretzels with pretzel cutter.

Torta od spanaca i krompira (Spinach and potatoes cake)

Sastojci: 300g krompira, 500g spanaca, 2 jaja (umucena), 100g kobasica (iseckana na kockice), 100g kackavalja (rendanog), 30g margarina, 2 kasike persunovog lista (sitno seckanog), so i biber po ukusu, 1 muskatni orah (izrendan).

Priprema:
1) Skuvati krompir u ljusci, oljustiti, izgnjeciti i proprziti na maslacu, na srednjoj temperaturi. Dodati so i biber po ukusu i muskatni orah.
2) Spanac obariti, iscediti, iseckati. Dodati kackavalj, kobasicu, jaja, persunov list Izmesati.
3) Tepsiju pomazati margarinom, staviti krompir, a na sredinu staviti smesu od spanaca.
4) Peci u rerni na 150 C oko 45 minuta.

Ingredients: 300g potatoes, 500g spinach, 2 eggs (well beaten), 100g sausage (diced), 100g yellow cheese (grated), 30g margarine (butter), 2 tablespoons parsley leaf (finely chopped), salt and pepper to taste, 1 nutmeg (grated).

Preparation:
1) Boil potatoes in shell, peel, squeeze and fry in butter over medium heat. Add salt and pepper to taste and nutmeg.
2) Blanch spinach, drain well and chop. Add cheese, sausage, eggs, parsley. Mix well.
3) Grease baking pan with margarine, put potatoes and in the middle, on top of potatoes put spinach mixture.
4) Bake in the oven at 150 C for about 45 minutes.

Lenja pita sa jabukama (Lazy apple pie)

Sastojci: 250g masti, 200g+4 kasike secera, 10g praska za pecivo, 1 jaje, 2 zumanca, 500g brasna, 125ml mleka, 1 kg jabuka, 3 kasike griza (ili prezli).

Priprema:
1) Brasno pomesati sa praskom za pecivo.
2) Mast umutiti sa 200g secera, dodati jaje i zumanca. Dobro izmesati. Zatim dodati brasno i mleko. Dobro izmesati. Podeliti na 2 dela.
3) Jabuke oljustiti i izrendati. Prvi deo testa staviti u pleh, staviti jabuke, posuti grizom, pa sa 4 kasike secera. Staviti drugi deo testa.
4) Peci u zagrejanoj rerni na 200 C.

Ingredients: 250g of lard, 200g+4 tablespoons of sugar, 10g baking powder, 1 egg, 2 egg yolks, 500g flour, 125ml milk, 1 kg of apples, 3 tablespoons semolina (or breadcrumbs).

Preparation:
1) Mix the flour with the baking powder.
2) Whisk lard with 200g sugar, add the egg and egg yolks. Mix well. Then add flour and milk. Mix well. Divided into 2 parts.
3) Peel and grate the apples. In baking pan place first part of the dough, put apples, sprinkle with semolina, and with 4 tablespoons of sugar. Put the second part of the dough.
4) Bake in preheated oven at 200 C.

Juneca salata (Beef salad)

Sastojci: 500g juneceg mesa (od plecke), 1 koren celera, 1 koren paskanata, 1 koren persuna, 2 sargarepe, 2 glavice crnog luka, 1 lovorov list, so, biber, za preliv – 200g majoneza, 300ml kisele pavlake, 200g kiselih krastavcica, 40g senfa, 2 kasike persunovog lista (sitno seckanog).

Priprema:
1) Meso iseckati na kocke. Koren celera, koren paskanata, koren persuna, sargarepu i crni luk oljustiti i sitno iseckati. Kisele krastavcice sitno iseckati.
2) U serpu naliti hladnu vodu, staviti meso i povrce, lovorov list i biber i kuvati. Izvaditi lovorov list. Ocediti.
3) Pomesati majonez, kiselu pavlaku, senf i kisele krastavcice. Dodati meso i povrce. Izmesati i posuti persunom. Staviti u frizider.

Ingredients: 500g beef (shoulder), 1 celery root, 1 parsnip root, parsley root 1, 2 carrots, 2 onions, 1 bay leaf, salt, pepper, for dressing – 200g mayonnaise, 300ml sour cream, 200g pickles, 40g mustard, 2 tablespoons parsley leaf (finely chopped).

Preparation:
1) Chop the meat into cubes. Peel celery root, parsnip root, parsley root, carrot and onion and finely chop. Finely chop pickles.
2) In pot pour cold water, put the meat and vegetables, bay leaf and pepper and cook. Remove the bay leaf. Drain well.
3) Combine mayonnaise, sour cream, mustard and pickles. Add the meat and vegetables. Stir and sprinkle with parsley. Put in refrigerator.

Sarena salata (Colorful salad)

Sastojci: 3 patlidzana, 3 tikvice, 700g paprika (pecena), 800g paradajza, so po ukusu.

Priprema:
1) Patlidzan, tikvice i paradajz oljustiti i iseckati na kockice. Papriku iseckati na kockice.
2) Patlidzan i tikvice posoliti i ostaviti da puste vodu. Ocediti.
3) U tiganju na malo ulja proprziti patlidzan i staviti u dublju posudu. Zatim proprziti tikvice, pa staviti preko patlidzana. Staviti papriku. Paradajz proprziti i staviti preko paprika. Staviti u frizider.

Ingredients: 3 eggplants, 3 zucchini, peppers 700g (cooked), 800g tomatoes, salt to taste.

Preparation:
1) Peel eggplants, zucchini and tomatoes and cut into cubes. Cut peppers into cubes.
2) Eggplant and zucchini sprinkle with salt and leave to release the water. Drain well.
3) In a skillet with a little oil fry eggplants and place in a deep dish. Then fry zucchini, and put over eggplants. Put peppers. Fry tomato and put over peppers. Refrigerate.

Sopska salata (Shopska salad)

Sastojci: 400g paradajza, 400g krastavca, 2 glavice crnog luka, 300g slanine, 2 kuvana jaja, 200g feta sira (izmrvljenog), 3-4 rotkvice.

Pripema:
1) Paradajz, krastavac i crni luk ocistiti i iseckati na kockice. Slaninu i jaja iseckati na kockice. Sve podeliti na dva dela. Rotkvice oljustiti i izrendati.
2) U dublju ciniju redjati red krastavca, red paradajza, red crnog luka, red slanine, red jaja. Zatim ponoviti jos jednom, odozgo posuti sir, a preko rotkvice.

Ingredients: 400g tomatoes, 400g cucumbers, 2 onions, 300g bacon (raw), 2 boiled eggs, 200g feta cheese (crumbled) or cottage cheese, 3-4 radishes.

Preparation:
1) Peel tomatoes, cucumbers and onions and cut into cubes. Bacon and eggs cut into cubes. Divide all into two parts. Peel and grate the radishes.
2) In deeper dish arrange layer of cucumber, layer of tomato, layer of onions, layer of bacon, layer of eggs. Then repeat once more, put cheese, and then sprinkle with radishes.

Punjene urme (Stuffed date palm)

punjene-urme-stuffed-datesSastojci: 20 komada krupnih urmi, 100g mlevenih oraha, 50g secera, 4 kasike mleka, 2 kasike ruma, cokoladna glazura – 100g cokolade, malo margarina ili 2 kasike ulja.

Priprema: 1) Iseci urme po duzini i izvaditi kostice.

2) U serpu staviti mleko, secer, orahe i rum i kuvati dok se ne zgusne.

3) Nadevati urme ovim filom.

4) Cokoladu otopiti sa margarinom ili uljem. Svaku urmu nabodite na cackalicu i umocite u cokoladnu glazuru.

Ingredients: 20 large pieces of date palm, 100g ground walnuts, 50g sugar, 4 tablespoons milk, 2 tablespoons of rum, chocolate glaze – 100g chocolate, a little margarine or 2 tablespoons of oil.

Preparation:
1) Cut date palm lengthwise and remove seeds.
2) In saucepan put milk, sugar, walnuts and rum and cook until thickens.
3) Stuff date palm with this filling.
4) Melt chocolate with margarine or oil. Place toothpick in each date palm and dip into the chocolate glaze.
