Punjena bombonjera (Stuffed chocolates)

Sastojci: 200g cokolade za kuvanje, 250g gi puter, 150g secera u prahu, rum, visnje, 100g badema.

Priprema:
1) Gi puter iseci na kocke. Cisnje potopiti u rum (ili razblazen rum) i ostaviti 1 sat.
2) Na pari, na srednjoj temperatuiri (4) otopiti cokoladu. Dodati gi puter i secer u prahu i mesati da se sve sjedini. Ostaviti da se malo ohladi.
3) Sipati u modle za cokoladu do pola. Staviti visnju pa preliti. Na vrh staviti po jedan badem.

Ingredients: 200g cooking chocolate (dark chocolate), 250g ghee butter, 150g powdered sugar, rum, sour cherries (pitted), 100g almonds.

Preparation:
1) Cut the ghee butter into cubes. Soak the sour cherries in rum (or diluted rum) and leave for 1 hour.
2) Melt the chocolate at medium temperature (4 over steam). Add ghee butter and powdered sugar and stir to combine. Allow to cool slightly.
3) Pour into chocolate molds halfway through. Put the sour cherry and pour. Put one almond on top.

Medeno srce (Honey hearts)

Sastojci: 600g brasna, 500ml mleka, 80g secera, 250g meda, 100ml ulja, 20g sode bikarbonem, 200g dzema od kajsija, 100g cokolade + 20g gi putera.

Priprema:
1) U serpicu staviti mleko da prokljuca na srednju temperaturu (4). Dodati secer i mesati da se otopi. Dodati med i mesati da se otopi. Ostaviti da se ohladi.
2) U vanglu pomesati brasno i sodu bikarbonu. Dodati mleko sa medom i dzem i dobro promesati. Pokriti i ostaviti 1 sat.
3) Peci u prethodno zagrejanoj rerni na 180 C. Kad se ohladi vaditi srca modlama ili seci na kocke.
4) Otopiti cokoladu sa gi puterom na pari, na srednjoj temperaturi (4).
5) Umakati u otopljenu cokoladu. Poredjati na posluzavnik oblozen papirom za pecenje i ostaviti da se stegne.

Ingredients: 600g flour, 500ml milk, 80g sugar, 250g honey, 100ml oil, 20g baking soda, 200g apricot jam, 100g chocolate + 20g ghee butter.

Preparation:
1) Put the milk in a pot and let it boil over medium heat (4). Add the sugar and mix to dissolve. Add honey and mix to dissolve. Allow to cool.
2) Mix flour and baking soda into the bowl. Add milk with honey and jam and mix well. Cover and leave for 1 hour.

Princes krofne (Princesses donuts)

Sastojci: 190g ostrog brasna, 3 jaja, 150ml ulja, 150ml vode, za fil – 1.5 L mleka, 375g margarina ili gi putera, 350g secera, 125g ostrog brasna, 120g vanila pudinga u prahu, za preliv od cokolade – 180g margarina, 100g cokolade, 5 kasicica rogaca u prahu, 12 kasika mleka, 5 kasika secera;

Priprema:
1) U serpu staviti vodu i ulje i na srednjoj temperaturi (4) pustiti da prokljuca. Dodati brasno i mesati drvenom kasikom tj, gnjeciti tako da razbijete grudvice brasna. Ostaviti da se ohladi.
2) Prebaciti u ciniju pa dodati 1 jaje pa mutiti mikserom dok se ne sjedini. Ponosviti postupak za preostala jaja.
3) Pleh namazati gi puterom. Smesu sipati u spric i istiskivati korpice (kao puslice). Peci u prethodno zagrejanoj rerni na 220 C oko 10 do 15 minuta.

Kuvani djevreci (Cooked bagels)

Sastojci: 600g speltinog brasna, 1 kasicica morske ili himalajske soli, 4 kasicice praska za pecivo, 1 1/2 + 4 kasicice sode bikarbone, 120g gi putera (sobne temperature),300ml kisele vode, 2 L vode.

Priprema:

1.  U vangli, pomesati brasno, so, prasak za pecivo i 1 1/2 kasicice sode bikarbone.
2. Dodati gi puter i kiselu vodu i zamesiti glatko testo.
3. Pokriti krpom i ostaviti da nadodje 1 sat (na toplom).
4. Testo premesiti uz dodatak malo brasna. Podeliti na manje jufke. Od svake jufke oblikovati djevreke.
5. U serpu sipati 2 L vode, dodati 4 kasicice sode bikarbone i pustiti da prokljuca.
6. Spustati djevreke u kljucalu vodu i kuvati dok ne isplivaju na povrsinu.
7. U pleh staviti papir za pecenje i redjati kuvane djevreke.
8. Peci u prethodno zagrejanoj rerni na 180 C dok ne porumene, oko 30 minuta.

Ingredients: 600g spelt flour, 1 teaspoon sea or Himalayan salt, 4 teaspoons baking powder, 1 1/2 + 4 teaspoons of baking soda, 120g ghee butter (room temperature), 300ml of sparkling water, 2 L of water.

Preparation:

1. In plastic bowl, mix the flour, salt, baking powder and 1 1/2 teaspoons of baking soda.
2. Add ghee butter and sparkling water and knead a smooth dough.
3. Cover with a kitchen cloth and let it rise for 1 hour (at warm place).
4. Knead the dough with the addition of a little flour. Divide the dough on smaller balls. From each ball form bagels.
5. In pot, put 2 liters of water, add 4 teaspoons of baking soda and let it boil.
6. Place bagels in boiling water and cook until they float to the surface.
7. In the baking pan put the baking paper and arrange cooked bagels.
8. Bake in the preheated oven at 180 C until golden brown, about 30 minutes.

Tortilje od heljdinog brasna (Tortillas from buckwheat flour)

Sastojci: 300g heljdinog brasna, 600ml vode, 2 cena belog luka, 3 kasike svezeg timijana ili 3 kasicice suvog, prstohvat morske ili himalajske soli, gi puter.

Priprema:

0. Prosejati brasno. Beli luk oljustiti i zgnjeciti. Svezi timijan sitno iseckati.
1. Pomesati sve sastojke osim gi putera. Dobro sjediniti i ostaviti da stoji pola sata.
2. U tiganju, na srednjoj temperaturi, rastopiti i ugrejati gi puter.

Napomena: staviti toliko gi putera da tiganj bude lagano premazan. Ako ste stavili malo vise, pokupite visak sa salvetom.

3. Staviti jednu kutlacu smese u tiganj i razliti smesu preko celog tiganja.
4. Peci tortilju 1-2 minuta, pa okrenuti na drugu stranu lopaticom (spatulom). Drugu stranu kratko isprziti, jer ako se dugo przi tortilja ce se raspadati.
5. Izvaditi tortilju i postupak ponoviti.

Ingredients: 300g of buckwheat flour, 600ml water, 2 cloves garlic, 3 tablespoons fresh thyme or 3 teaspoons of dried, pinch of sea salt or Himalayan salt, ghee butter.

Preparation:

0. Sift flour. Peel garlic and mash. Finely chop the fresh thyme.
1. Mix all ingredients except ghee butter. Combine well and leave to stand for half an hour.
2. In a frying pan, over medium heat, melt the butter and let it heat.

Note: put small amount of gi butter to the pan – to be lightly coated. If you put a little more, pick up excess with a napkin.

3. Place a ladle of the mixture into the pan and spread evenly the mixture over the entire pan.
4. Fry tortilla 1-2 minutes, then turn to the other side with a spatula. Other side fry briefly, because if it’s fried too much, tortilla will crumble.
5. Remove tortilla and repeat from step 2.
