Domace kore 2 (Homemade phyllo dough 2)

Sastojci: 750g mekog brasna, 140 g secera, 380 ml mleka (mlakog), 15g suvog kvasca, 150g margarina (otopljenog), 1 vece jaje ili 2 manja, prstohvat soli, par kockica margarina.

Priprema:

1. U ciniji, pomesati mleko, kvasac, secer i 1 kasiku brasna. Promesati i ostaviti da nadodje.

3. Vanglu pokriti vlaznom krpom i na toplom ostaviti pola sata da naraste.

Napomena: ako filujete kore vocem koje pusta sok, voce pomesati sa secerom i ostalim sastojcima, zavisno od recepta, pre samog filovanja.

4. Testo podeliti na 3 dela. Razviti svaki deo, filovati sa filom prema receptu, urolati i staviti u pleh namazan margarinom. Pokriti i ostaviti pola sata da nadodje..
5. Zavisno od recepta, kore se obicno peku u zagrejanoj rerni na 200 C oko 45 minuta. Pre pecenja odozgo staviti par kockica margarina.

1) Skuvati 500g secera i 500ml mleka. Ohladiti.
2) Umutiti zumanca sa 3 kasike secera i 3 kasike mleka. Kuvati na pari. U toku kuvanja dodati cokoladu. Ohladiti. Zatim pomesati sa masom od secera i mleka.
3) Dodati alkohola i rum. Sipati u flase i ostaviti da stoji 3 dana.
4) Pre upotrebe promuckati flase.

Ingredients: 500ml + 3 tablespoons milk, 500g + 3 tablespoons sugar, 3 egg yolks, 3 sticks of chocolate, 200ml of alcohol, 100ml of rum.

Preparation:
1) Cook 500g sugar and 500ml milk. Cool.

Priprema:

1. Pomesati brasno sa praskom za pecivo.

2. Umutiti jaja sa secerom, dodati ulje i mleko i postepeno dodavati brasno-po potrebi (da bude srednje gustine tj. malo redje).

3. Sipati u podmazan pleh i peci.

4. Pomesati polja solje secera sa vanilin secerom i visnjama (tresnjama).

5. Kada je kolac na pola pecen prekriti visnjama i vratiti u rernu da se dopece.

4) Sipati u cinijice i posuti lesnicima, bademima i orasima.

Predlog: ovaj puding mozete posluziti posle Tuniske corbe od jogurta i spanaca.

Ingredients: 600g sharp flour, 400g of honey, 300 ml of water, 80g hazelnuts, 80g almonds, 80g walnuts, 1.5 liters of milk.

Preparation:
1) Chop hazelnuts, almonds and walnuts.
2) Mix the flour and 750ml milk.

Sastojci: 4 banane, 50g secera, 1 kasika brasna, 150ml mleka, 3 jaja, 1 kasika margarina.

Priprema:
1) Izgnjeciti banane viljuskom. Pazljivo odvojite zumanaca od belanaca. Umutite zumanca i posebno belanca.
2) U serpi malo zagrejati mleko. Dodati secer, brasno i pustiti da provri, uz mesanje. Skloniti sa sporeta. Dodati banane, zumanca, margarina i belanca. Dobro sjediniti.
3) Smesu sipati u modle i peci u prethodno zagrejanoj rerni na 180C oko 10 minuta.

Predlog: mozete napraviti Banana dezert.

Priprema:
1) Rastopiti puter pa dodati brasno i prziti 3 minuta uz konstano mesanje. Dodati toplo mleko i mesati dok ne dobijete krem bez grudvica. Posoliti po ukusu.
2) Dodati paradajz sos i kuvati jos 5 minuta.

Ingredients: 500ml milk, 100g tomato sauce, 50g flour, 80g butter, salt.

Preparation:

Plazma sejk (Plain biscuits milkshake)

Sastojci: 200g mlevenog keksa, 50g kakaoa, 400 ml mleka, 50g cokolade, 1 kasicica margarina, 40g slaga, 100ml hladne vode (iz frizidera).

Priprema:
1) Plazmu, mleko i kakao stavite u blender.
2) Cokoladu otopite sa margarinom. Slag umutiti sa vodom.
3) U dve case stavite malo otopljene cokolade. Sipajte sejk. Sipati slag i ukrasiti otopljenom cokoladom.

Ingredients: 200g plain biscuits, 50g cocoa, 400ml milk, 50g of chocolate, 1 tsp margarine, 40g whipped cream (powder), 100ml of cold water (from the fridge).

Preparation:

Priprema:
1) U 100ml mleka razmutiti vanila puding. Preostalo mleko prokuvati sa secerom. S vremena na vreme promesati dok se ne ohladi.
2) Penasto umutiti puter (margarin), pa u njega dodavati kasiku po kasiku kuvanog pudinga i sve zajedno dobro izmesati.

Predlog: Od ovog krema mogu se spremati razliciti kremovi:

Krem od butera sa orasima: 100g samlevenih oraha pomesati sa toplim pudingom.

Krem od butera sa dzemom od kajsija: 100g dzema umutiti sa kuvanim kremom.

Krem od butera sa kafom: 2-3 kasicice kafe pomesati sa toplim kremom.

Krem od butera sa cokoladom i kafom: 1 kasicicu kafe i 50g strugane cokolade pomesati sa pudingom.

Krem od butera sa maraskinom: 2-3 kasike maraskina pomesati sa malo rashladjenim pudingom.

Krem od butera sa limunom: 3-4 kasike sirupa od limuna i malo svezeg soka od limuna pomesati sa toplim pudingom.

Krem od butera sa rumom: 2-3 kasike ruma pomesati sa malo rashladjenim pudingom.

Krem od butera sa jagodama: 150g kase od jagoda pomesati sa toplim kremom.

Ingredients: 250g butter (margarine), 500ml of milk, 100g of sugar.

Preparation:

2) U serpu staviti 300ml mleka sa 200g secera i ostaviti da prokljuca. Smanjiti na srednju temperaturu, dodati 250g margarina i mesati dok se ne otopi. Dodati kokos i promesati. Zatim dodati 350g mlevenog keksa. Zatim dodati drugi deo iz koraka 1) i promesati. Ostaviti da se ohladi, povremeno promesati. Podeliti na 3 dela.
3) Redjati sledecim redom: list oblande, zuti fil, list oblande, crni fil, list oblande, zuti fil, list oblande, crni fil, list oblande, zuti fil.
4) Prekriti masnim papirom, staviti posluzavnik, poredjati par teskih knjiga, ostaviti da odstoji pa seci zeljene oblike.

cokoladne oblande sa kokosom

Cokoladni kolac sa kokosom (Chocolate cake with coconut)

Sastojci: 2 jaja, 8 kasika secera, 12 kasika mleka, 12 kasika brasna, 10g praska za pecivo, 1 kasika kakaoa, za fil – 500ml mleka, 8 kasika secera, 3 kasike griza, 250g margarina, 100g cokolade, 100g kokosa.

Priprema:
1) Pomesati brasno sa praskom za pecivo. Umutiti jaja sa secerom, dodati mleko i brasno. Dobro izmesati.
2) Pleh podmazati margarinom, posuti brasnom, sipati smesu i peci na 200 C dok cackalica stavljena u sredinu ne izadje cista. Ostaviti da se ohladi pa iseci na pola (ako koristite manji a dublji pleh, preseci po horizontali, a ako koristite veci a plici pleh, onda po vertikali)
3) Za fil – skuvati mleko, dodati secer i griz i kuvati oko 7 minuta, uz stalno mesanje. Zatim dodati kokos i kuvati jos 3 minuta. Ostaviti da se prohladi. Dodati margarin i cokoladu izlomljenu na kocke. Dobro izmesati.
4) Fil staviti preko prve kore, poklopiti drugom korom i seci na kocke.

Ingredients: 2 eggs, 8 tablespoons of sugar, 12 tablespoons of milk, 12 tablespoons of flour, 10g baking powder, 1 tablespoon cocoa, for filling – 500ml milk, 8 tablespoons of sugar, 3 tablespoons of semolina, 250g butter, 100g chocolate, 100g coconut.

Preparation:
1) Mix flour with baking powder. Whisk the eggs with the sugar, add the milk and flour. Mix well.

Lenja pita sa jabukama (Lazy apple pie)

Sastojci: 250g masti, 200g+4 kasike secera, 10g praska za pecivo, 1 jaje, 2 zumanca, 500g brasna, 125ml mleka, 1 kg jabuka, 3 kasike griza (ili prezli).

Priprema:
1) Brasno pomesati sa praskom za pecivo.
2) Mast umutiti sa 200g secera, dodati jaje i zumanca. Dobro izmesati. Zatim dodati brasno i mleko. Dobro izmesati. Podeliti na 2 dela.
3) Jabuke oljustiti i izrendati. Prvi deo testa staviti u pleh, staviti jabuke, posuti grizom, pa sa 4 kasike secera. Staviti drugi deo testa.
4) Peci u zagrejanoj rerni na 200 C.

Ingredients: 250g of lard, 200g+4 tablespoons of sugar, 10g baking powder, 1 egg, 2 egg yolks, 500g flour, 125ml milk, 1 kg of apples, 3 tablespoons semolina (or breadcrumbs).

Preparation:
1) Mix the flour with the baking powder.
2) Whisk lard with 200g sugar, add the egg and egg yolks. Mix well. Then add flour and milk. Mix well. Divided into 2 parts.
3) Peel and grate the apples. In baking pan place first part of the dough, put apples, sprinkle with semolina, and with 4 tablespoons of sugar. Put the second part of the dough.

Punjene urme (Stuffed date palm)

Priprema: 1) Iseci urme po duzini i izvaditi kostice.

2) U serpu staviti mleko, secer, orahe i rum i kuvati dok se ne zgusne.

3) Nadevati urme ovim filom.

4) Cokoladu otopiti sa margarinom ili uljem. Svaku urmu nabodite na cackalicu i umocite u cokoladnu glazuru.

Priprema: 

1) Prziti secer do rumene boje, pa dodati mleko i brasno i sve kuvati uz neprestano mesanje. Kada masa pocne da se odvaja od serpe, skinuti sa vatre i ostaviti da se ohladi.

2) Odvojiti zumanca od belanaca. Dodati zumanca, 4 kasike secera i sneg od belenaca prethodno ohladjenoj smesi. Promesati.

3) Staviti u podmazan pleh i peci na 200 stepeni.

Ingredients:150g sugar + 4 tablespoons of sugar, 200ml milk, 2 tablespoons flour, 4 eggs, oil for greasing pan.

Preparation:

Priprema:

1) U solju sipati 150ml mleka, izmrviti kvasac, dodati secer i 1 kasiku brasna. Promesati i ostaviti da nadodje.

2) Zamesiti testo sa brasnom i nadoslim kvascem, dodati jaja i preostalo mleko. Zatim ostaviti 1 sat da naraste, na toplom.

3) Za to vreme oljustiti jabuke, izrendati i pomesati sa nadoslim testom. Ostaviti da stoji jos 20 minuta.

4) Kasikom odvajati ustipke i prziti ih na ulju ili vreloj masti. Po zelji posuti ih secerom u prahu.

Ingredients: 500ml milk (warm), 2 eggs, 20g of yeast, 1 teaspoon of sugar, flour as needed (to get a thick dough), 500g apples, powdered sugar.

Preparation:
1) Pour 150ml milk in cup, crumble yeast, add sugar and 1 tablespoon of flour. Stir and leave to rest.
2) Knead the dough with flour and yeast mixture, add the eggs and remaining milk. Then leave one hour to grow at warm.
3) During this time, peel apples, grate and mix with risen dough. Allow to stand for 20 minutes.
4) Using tablespoon take out fritters and fry them in boiling oil or lard. If desired, sprinkle them with powdered sugar.

Punjene krofne s visnjama (Donuts stuffed with cherries)

Sastojci: 500g brasna, 2 jajeta, 250ml toplog mleka, 20g kvasca, 50g margarina (putera), na vrh noza soli, 2 kasicice secera, oko 50 komada konzervisanih visanja ili svezih, 250g mase za marcipan, margarin za podmazivanje pleha/tepsije i za posipanje: 5 kasika secera u prahu.

Priprema:

1) U solju sipati 150ml mleka, izmrviti kvasac, dodati 1 kasiku brasna i secer. Promesati i ostaviti da kvasac nadodje.

2) U vanglu, sipati brasno, dodati so, nadosli kvasac i preostalo mleko i zamesiti testo. Ostaviti da nadodje.

3) Formirati rolnu i podeliti na 50 jednakih kolutova. Svaki kolut pritisnuti dlanom, da dobijete velicinu od oko 8cm. Masu za marcipan takodje podelite na 50 delova. Svaki kolut pritisnite dlanom, da dobijete velicinu od oko 4cm, i stavite na sredinu testa.

4) Na marcipan stavite po jednu visnju (dobro ocedjenu – ako je iz konzerve ili tegle i bez kostica). Kolutove testa sa filom formirajte u lopte. Okruglu dublju tepsiju premazite margarinom i poredjate krofnice (postavite jednu do druge), ispunite tepsiju, ali ne previse gusto.

5) Ostaviti na toplom da ponovo nadodju oko 20 minuta, a zatim stavite u rernu, prethodno zagrejanu na 220° i pecite oko 20-25 minuta.

6) Pospite secerom u prahu pre sluzenja.

Ingredients: 500g flour, 2 eggs, 250ml warm milk, 20g yeast, 50g margarine (butter), on top of the knife of salt, 2 teaspoons sugar, about 50 pieces canned or fresh cherries, 250g marzipan mass, margarine for greasing the baking pan/dish and for sprinkling – 5 tablespoons powdered sugar.

Preparation:
1) Pour 150ml milk in cup, crumble yeast, add 1 tablespoon of flour and sugar. Stir and let the yeast rest.
2) In bowl, pour the flour, add the salt, yeast and remaining milk and knead the dough. Leave it to rise.
3) Form roll and divide into 50 equal balls. Press each ball with palms to get the size of about 8cm. Divide marzipan mass into 50 balls. Press each ball with palms to get the size of about 4cm, and put in the middle of the dough.
4) Place one sour cherry on the marzipan (well drained – if it’s from cans or jars and removed pits). Rings of dough with toppings, form into balls. Deeper round baking pan/dish, grease with margarine and put donuts (set next to each other), fill the pan, but not too thick.
5) Leave it in a warm place for about 20 minutes to rise again, then put in the oven, pre-heated to 220 degrees and bake for about 20-25 minutes.
6) Sprinkle with powdered sugar before serving.

Podloga za picu (Pizza dough)

Sastojci: 400g brasna, 1/2 kasicice soli, 1 kasika maslinovog ulja, 100ml tople vode, 100ml mleka (punomasnog), 10g suvog kvasca, margarin (za podmazivanje pleha/tepsije).

Priprema: 

1) U solju sipati mleko, izmrviti kvasac, dodati kasiku brasna, promesati i ostaviti da nadodje.

2) Brasno sipati u posudu, dodati so, promesati; u sredini napraviti rupu dodati nadosao kvasac, vodu i umesiti testo. Ostaviti da nadodje.

3) Zatim ponovo premesiti, podeliti na dve ili vise jufki, razviti tanke krugove, krajeve ostaviti malo deblje. Staviti u pleh/tepsiju podmazan margarinom.

Napomena: testo izbodite vise puta viljuskom da prilikom pecenja ne nastanu mehuri.

4) Prve pice (zavisno od velicine pica) ostaviti da nadodju 15-20 minuta pre nego sto ih stavite da se peku. Peci u zagrejanoj rerni na 220°, od 25 do 45 minuta, sto zavisi od debljine sloja koji ste poslagali na testo.

Ingredients: 400g flour, 1/2 teaspoon salt, 1 tablespoon of olive oil, 100ml warm water, 100ml milk (full-fat), 10g of dry yeast, margarine (for greasing pan/dish).

Preparation:
1) Pour milk into a cup, crumble the yeast, add a tablespoon of flour, stir and leave to rest.
2) Pour flour into a bowl, add salt, stir, make a hole in the middle to add risen yeast and water, and then knead the dough. Leave it to rest.
3) Then, knead the dough again, divide into two or more balls, develop a thin circle, leave ends a little thicker. Put in baking dish/pan greased with margarine.
Note: Press the dough with fork several times, so during baking there are no bubbles.
4) The first pizza (depending on size of pizza) leave it to rest for 15-20 minutes before you put them to bake. Bake in preheated oven at 220 °, for 25 to 45 minutes, depending on the thickness of the layer that you placed on the dough.

Hleb od celih zrna sa orasima (Whole grain bread with walnuts)

Sastojci: 250g psenicnog brasna, 150g psenice (krupno samlevene), 20g kvasca, 1 kasika meda, 370ml toplog mleka, 250g oraha, 80g margarina (putera), 1 kasicica soli, 1 kasicica semena anisa, 1 zumance, 2 kasike kisele pavlake, 2 kasike susama.

Priprema:

1) U solju sipati 150 ml mleka, izmrviti kvasac i dodati med. Promesati i ostaviti na uskisne.

2) Orahe krupno iseckati.

3) Pomesati brasno, so, anis i psenicu u vangli, napraviti rupu u sredini, dodati uskisli kvasac, dodati margarin iseckan na listice i ostatak mleka. Zamesiti testo, kad pocne da se odvaja od posude pokriti i ostaviti da udvostruci masu.

4) Zatim dodati orahe.

Napomena: kao i kod testa sa kvascem orasi se dodaju na kraju inace bi testo posivelo.

5)  Formirati hleb, staviti u podmazan pleh i ostaviti da naraste 30 minuta. Rernu zagrejati na 220°. Zaseci hleb odozgo na nekoliko mesta.

6) Umutiti zumance i kiselu pavlaku i premazati hleb. Posuti susamom i peci 10 minuta, zatim smanjiti temperaturu na 200° i peci jos 1 sat.

Ingredients: 250g wheat flour, 150g wheat grains (coarse grinded), 20g of yeast, 1 tablespoon honey, 370ml warm milk, 250g walnuts, 80g margarine (butter), 1 teaspoon salt, 1 teaspoon anise seeds, 1 egg yolk, 2 tablespoons of sour cream, 2 tablespoons sesame seeds.

Preparation:
1) Pour 150 ml of milk in cup, crumble the yeast and add honey. Stir and leave to rise.
2) Chop the walnuts.
3) Combine flour, salt, anise seeds and wheat grains in bowl, make a hole in the middle, add risen yeast, add margarine (cut into strips) and the rest of milk. Knead the dough, when it starts to pull away from the bowl cover and leave to rise until double the mass.
4) Then add the walnuts.

Note: as with Dough with yeast, walnuts are added at the end otherwise the dough would become gray.
5) Develop bread, put in greased pan and allow to rise for 30 minutes. Preheat oven to 220 °. Cut bread on top with knife few times.
6) Whisk egg yolk and sour cream and brush bread. Sprinkle with sesame seeds and bake for 10 minutes, then reduce temperature to 200 degrees and bake for another hour.
